Panca Pepper Paste - 3 (tablespoons)
Red or White Vinegar - 3 (tablespoons)
Black Beer - 1/2 (cup)
Cumin - To taste
Finely chopped garlic - 1 (teaspoon)
Salt and Pepper - To taste
Oregano - 1 (teaspoon)
Yellow chili pepper strips - 1 (unit)
Red Onion in wedges - 1 (unit)
Well washed beef liver - 400 (grams)
Yellow Potato in quarters - 1 (kg)
Whole Milk (Fresh) - 500 (milliliters)
Butter - 2 (tablespoons)
PREPARATION
For the Fried Liver:
- In a bowl add 3 tablespoons of chili panca, 3 tablespoons of red or white vinegar, 1/2 cup of black beer, cumin to taste, finely chopped garlic, salt and pepper to taste, 1 teaspoon of oregano, one yellow pepper cut into strips, one red onion into wedges and integrate.
- Add 400 grams of well-washed beef liver to the container. Integrate with your hands and refrigerate for 4-8 hours.
- Fry the liver in a frying pan with a splash of oil, for 2 minutes over medium heat, turn over and fry for 2 more minutes.
- Add vegetables and cook for 1 minute. Serve hot with white rice and puree.
For the Mashed Potatoes:
- In a pot over medium heat add 1 kilo of yellow potato cut into quarters, add 1 cup of water, 1 tablespoonful of salt. Cover and simmer for 20 minutes.
- Add 500 milliliters of whole milk (fresh), beat with a balloon whisk until fluffy, add 2 tablespoons of butter. Integrate and reserve puree.
